very slow process of adoption...
I have become pretty productive around the house.
I'm thinking it's because it's the only thing I can control right now.
I certainly can't make the adoption process move any faster,
but I can start and finish some little projects around the house
that make me feel like I am completing
I do wish I was more of a thinker,
But, those are not my strengths...
I am a busy one- doing, reacting, making things happen.
So, I am channeling my energy into cleaning, organizing, and baking (so far, this is working out just fine by everyone else in the family;)
Here's a new recipe we tried this week that must be shared- at least I managed to
Baked French Toast
(think french toast meets cinnamon toast…yum!)
- ½ loaf bread, I used some oatmeal bread that was getting a little stale, but my gluten free bread works perfectly too:)
- 4 eggs, beaten
- 1 cup milk
- 1/2 cup plain or vanilla yogurt
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/3 cup Flour
- 1/3 cup Firmly Packed Brown Sugar
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- ¾ stick unsalted sweet cream butter
- 1/4 tsp. chopped pecans (optional)
For the topping, mix the flour, brown sugar, cinnamon, and salt in a separate bowl. Cut in the butter and mix until it resembles coarse crumbs. Add chopped pecans if desired.
Add topping and bake for one hour uncovered. It will be puffy and browned on top when it’s finished. Serve warm with syrup, whipped cream, fruit, or just by itself…it’s that good:)
